A Family Recipe

It’s been a crazy year – for everyone – and time has just moved at what seems to be light speed. Well, that’s how this year has been for me. One day it’s March and we’re gearing up for a busy spring and then bam!, it’s almost Halloween and I’m preparing for the holidays!

This time of year always has me thinking of family, past and present, and the yummy food associated with those memories and activities. One of my daughter’s favorite treats as a child was making and eating banana coins. It’s very simple, quick, and lots of fun to make.

Most recently, I made these with her three oldest children while she was in the hospital giving birth to her fourth baby, also our seventh grandchild. We had so much fun and the two oldest grands enjoyed mixing up the toppings to create their own version of the banana coins.

These can easily be a thematic treat for holidays: color the coconut orange for Halloween or Thanksgiving, red and green for Christmas, pink and red for Valentine’s Day, green for St. Patrick’s Day, red and blue for Memorial Day and Independence Day.

One thing I can’t stress enough is that WAX PAPER IS YOUR FRIEND!! You’ll need it to put the coins on for the freezer, but I like to put it down on the work surface when possible to aid in easy clean up. I’ve found that the worst part of baking and cooking is the clean-up so try to minimize that and do it as part of the preparation process.

Ingredients:

3-4 bananas

Yogurt – any flavor

Shredded coconut

Any other toppings you might like, i.e. mini chocolate bits, granola, jimmies, sprinkles (yes, there is a difference!), etc.

Slice the bananas into coins. Dip the coins into the yogurt and cover completely. Then dip the coins into the coconut and cover both sides. Lay the coins onto a wax-paper covered cookie sheet. Place them close together but not touching. Put the cookie sheet into the freezer for 20 minutes. When frozen, remove them from the freezer, lift off the wax paper, and place the coins into a zip lock bag or freezer safe container. Store uneaten coins in freezer.
